BZ 1805265 was nominated as a prioritized bug. In today's Prioritized Bugs meeting, we decided to defer on this to check with you. Is this something the team is interested in adding back to the UI?
It hasn't been removed from the UI. It's just been broken for a long time. The checkbox is only available for a couple minutes after the update is prepared, after which it disappears. This is currently broken in RHEL 8 as well.
I agree it should be a prioritized bug, and also that we should track it here.

This regressed with packagekit starting to auto-shutdown the packagekitd daemon in commit https://github.com/hughsie/PackageKit/commit/0c84d71509e851db20445c747529bd7d3724f081 so gnome-shell isn't able to read the properties over dbus it needs.
Options are to revert the packagekit commit or to change gnome-shell shutdown dialog to activate packagekitd when the dialog is mapped.
